Sabudana puri is a crispy, deep-fried snack made with sago, mashed potatoes, and flours. Popular during fasting, it’s light, crunchy, and pairs perfectly with curd or green chutney.
1 cup sabudana soaked for 4-5 hours 2 mashed boiled potatoes 1/2 cup rajgira flour 2 tbsp roasted and crushed peanuts 2 finely chopped green chillies 1 tsp cumin seeds 1 tbsp chopped coriander leaves Salt to taste (sendha namak for fasting) Oil for deep frying
Drain soaked sabudana and mix with mashed potatoes, peanuts, green chillies, cumin, coriander, flour and knead into a soft dough.
Roll into small puris using a rolling pin.
Deep fry in hot oil till golden and crisp.
Serve hot with curd or green chutney.
