Soft, melt-in-the-mouth kaju barfi is a timeless Indian sweet made from cashews and sugar. Its rich texture and nutty flavour make it a festival favourite across generations.
1 cup cashews ½ cup sugar ¼ cup water 1 tbsp ghee Silver leaf (optional, for garnish)
Grind cashews into a fine powder (avoid over-grinding).
In a pan, heat sugar and water until it forms a sticky syrup.
Add cashew powder and stir continuously on low flame.
When the mixture thickens and leaves the pan, add ghee and mix.
Spread on a greased plate, roll flat, cool slightly, and cut into diamond-shaped barfis.
