Celebrate the festival of Diwali with the rich, royal charm of Shahi Tukda. This classic dessert, prepared with crispy bread, creamy rabri, infused with saffron, delivers the festive sweetness to your festive spread, perfect for sharing with family and loved ones.
6–8 bread slices 2 cups full-cream milk ½ cup Sugar (adjust to taste) 8–10 strands Saffron ¼ tsp Cardamom powder 3–4 tbsp of Ghee 2 tbsp chopped almonds, pistachios, and cashews 1 tsp Rose water – 50 grams, crumble Khoya (mawa)
Cut the bread into a triangle shape and fry it lightly in ghee until it turns golden and a bit crisp. Once done, keep it aside on paper napkins to remove excess oil.
To prepare the rabri, boil the milk and to it add some sugar, saffron, and cardamom. Simmer it on a low flame until it gets a thick consistency. You can also add crumbled khoya to get a rich, creamy texture.
Once the rabri is prepared, arrange the fried bread on a plate and set some warm rabri generously over the slices. This will let the bread slices soak up the flavours of the rabri.
Grain the shahi tukda with some chopped nuts and a few drops of rose water (optional), as it enhances the taste.
Serve it warm or chilled for a rich Diwali dessert!
