Kaju katli, also known as kaju barfi, is a classic Diwali sweet made from cashews, sugar, and ghee. Smooth, elegant, and mildly sweet, it’s one of India’s most cherished festive treats.
1 cup cashews ½ cup sugar ¼ cup water 1 tsp ghee Silver vark (optional)
Grind cashews into a fine powder, making sure they do not release oil.
Boil sugar and water in a pan to make a one-string consistency syrup.
Add the cashew powder and cook on low heat until the mixture thickens and leaves the sides of the pan.
Grease a plate with ghee, transfer the mixture, and roll it flat using a buttered spatula or rolling pin.
Cool slightly, cut into diamond shapes, and cover with silver vark for a festive finish.
