Gujarati magaj is a rich and aromatic sweet made from roasted gram flour and pure ghee. It’s a festive classic with a soft, grainy texture and a comforting flavour.
2 cups gram flour (besan) 1 cup ghee 1 cup sugar ½ cup water ½ tsp cardamom powder Chopped almonds and pistachios for garnish
Heat ghee in a pan, add gram flour, and roast on low flame until golden and aromatic.
Prepare a one-string sugar syrup using sugar and water.
Mix the syrup into the roasted besan and stir until it thickens.
Spread into a greased tray, garnish with nuts, cool completely, and cut into squares.
