Sabudana kheer is a creamy and soothing Indian dessert made with tapioca pearls, milk, and sugar. It’s often prepared during fasting days and adds a comforting sweetness to Diwali celebrations.
½ cup sabudana (sago pearls) 3 cups full-cream milk ¼ cup sugar ¼ tsp cardamom powder 2 tbsp chopped almonds and cashews A few saffron strands (optional)
Soak sabudana in water for 2 hours, then drain completely.
Boil milk in a pan and add the soaked sabudana.
Cook until the pearls become translucent, then add sugar, cardamom, and saffron.
Simmer until thick, garnish with nuts, and serve warm or chilled.
