Adhirasam is a classic South Indian Diwali sweet prepared with jaggery and rice flour. It has a deep golden colour, a chewy texture inside, and a crisp outer layer. The recipe is traditional to Tamil Nadu and is prepared for festivals and special occasions.
1 cup raw rice ¾ cup jaggery (grated) ½ tsp cardamom powder 1 tbsp ghee Oil for frying
Wash and soak the raw rice for 2 hours, drain, and grind it into a fine powder while slightly damp.
Melt jaggery in ¼ cup water over low flame, strain to remove impurities, and cook to a sticky syrup.
Mix the jaggery syrup with rice flour and cardamom powder to make a thick, soft dough.
Cover and rest the dough overnight at room temperature to develop flavour and texture.
Shape into small discs and deep-fry in medium-hot oil until puffed and golden brown, then drain and cool.
