This sandwich replaces regular bread with a chole and suji-based batter that cooks directly in a sandwich maker. The addition of chickpeas and paneer increases plant protein, making it more filling than a standard sandwich. It holds structure well and works as a wholesome snack or light meal. The flavour is mildly spiced and pairs well with fresh lettuce and onion.
For the batter: 1 cup boiled chickpeas (chole) ½ cup semolina (suji) 1–2 green chillies A handful of curry leaves ½ cup curd ¾ cup water (adjust if needed) Salt to taste For the filling: ½ cup boiled chickpeas ¼ cup grated paneer Salt to taste Black pepper to taste Homemade cheese spread Lettuce leaves Sliced onion Chaat masala
Blend boiled chickpeas, suji, green chillies, curry leaves, curd, water and salt into a smooth, pourable batter. Adjust water if required.
Grease a sandwich maker lightly and pour a thin layer of batter. Cook on low flame until lightly set, then flip and cook the other side. Prepare 2–3 slices this way.
In a pan, sauté boiled chickpeas and paneer with salt and black pepper until heated through.
Spread homemade cheese spread on one slice, layer lettuce, sautéed chole-paneer mixture, sliced onion and a sprinkle of chaat masala.
Top with another slice and serve warm.
