Puffy, golden and lightly tangy, this bhature recipe recreates that irresistible dhaba-style indulgence at home. The dough rests just enough to create soft, airy breads that fry up beautifully crisp outside and fluffy inside.
2 cups maida 2 tbsp sooji ½ cup curd 1 tsp sugar ½ tsp baking soda ½ tsp salt 1 tbsp oil ¾ cup water (approx.) Oil for deep frying
Mix maida, sooji, sugar, salt, and baking soda in a bowl.
Add curd and oil, then knead into a soft dough with water.
Cover and let the dough rest for 2 hours, until slightly airy.
Divide into balls and roll into medium-thick discs.
Deep fry in hot oil, gently pressing until they puff and turn golden.
