Stuffed idli is a delightful twist to the classic South Indian breakfast. These idlis are filled with mashed potatoes and a spice mixture, adding a burst to every bite. They pair wonderfully with chutney or sambar!
For Batter: 2 cups idli rice 1 cup urad dal 1 tsp fenugreek seeds Salt For Stuffing: 1 cup mashed potatoes 1/2 cup green peas 1 chopped onion 1 chopped green chilli 1/2 tsp turmeric powder 1/2 tsp red chilli powder 1 tbsp oil Salt
Soak rice, urad dal, fenugreek seeds for 8 hours, then grind and ferment overnight.
For stuffing, saute onions, green chilli in oil, add mashed potatoes, peas, spices and cook.
Pour the batter into greased idli moulds, add a ball of stuffing, and cover with more batter.
Steam for 12 minutes.
Serve the stuffed idli with hot sambar and chutney.
