What makes winter recipes such as the pumpkin soup special is that it incorporates seasonal ingredients to produce a comforting bowl. With a handful of ingredients and minimal effort, make a batch of this delicious and plant-based soup for dinner tonight.
250 grams orange pumpkin, cubed 1 large onion, diced 3-4 cloves garlic, peeled 2-3 sprigs fresh thyme 1 teaspoon red chilli flakes 1 cup coconut milk 1 vegetable stock cube 1 cup water 1 tablespoon olive oil Salt and pepper, to taste Pumpkin seeds, for garnish
Heat the olive oil in a large saucepan and sauté the onions and garlic until fragrant.
Add the thyme, chilli flakes and mix well to combine before tipping in the cubed pumpkin.
Season lightly with some salt and continue to cook for 4-5 minutes, until the vegetables begin to soften.
Add the water and bring to a boil before reducing to add the coconut milk and vegetable stock cube.
Simmer for 10-12 minutes before using a hand blender to puree the mixture until smooth.
Bring to one last boil before adjusting the seasoning with salt and pepper.
Ladle into serving bowls and garnish with pumpkin seeds to relish when hot.
