Raj Kachori makes for a delicious evening binge, or you can also include it in your dinner party at home. It is also a great treat for festive spreads. Here is a simple and easy recipe.
1 hollow kachori 2 tbsp yoghurt 1 tbsp tamarind chutney 1 tbsp coriander chutney 100 gm boiled potatoes 100 gm sprouts 1 dahi bhalla 2-3 papdis 50 gm boiled chick peas A few tsp of pomegranate bhujia A few ginger juliennes A pinch of yellow chilli Black pepper Salt
Fill the raj kachori with everything except chutneys, yoghurt and seasoning.
Sprinkle seasoning. Pour tamarind chutney and coriander chutney.
Add the yoghurt over it. Garnish with pomegranates.
You control the quantity and quality of ingredients, so no added preservatives go into it.
The kachoris remain fresh for a fortnight, so it is good to make them a few days before the festivities.
