People who have gone shopping at Lajpat Nagar, Sarojini, or Sadar Market in Delhi will swear by relishing matar kulcha for breakfast. It is a comforting dish in which maida-based kulcha is served with white peas cooked in spices.
4-6 kulchas 1.5 cups dried matar 1 chopped onion, tomato 1 tbsp oil ¼ tsp turmeric, hing ½ tsp red chilli, pepper ½ tsp cumin powder 1 tsp chaat masala Salt to taste 1 tbsp butter 2 tbsp coriander leaves Water as needed 1 tsp ginger, garlic paste 2 tbsp lemon juice 2 slit green chillies 1 tsp coriander powder
Soak dry matar and pressure cook until it is soft and gooey.
Heat oil and saute cumin seeds, green chillies, ginger-garlic paste (optional).
Roast chopped onion until it is pink. Add tomatoes and salt.
After cooking for 5 minutes, add spices along with a splash of water. Once spices release the oil, pour cooked matar.
Top the matar with tamarind juice, lemon juice, and coriander leaves.
Toast kulchas on a hot tawa and serve them with matar.
