Dahi phulki or dahi vada is a must-have on Holi and even during Ramadan. Soft vadas are topped with dahi, chaat masala, powdered spices, and chutneys. The dish is fulfilling and at the same time, a burst of flavours in your mouth. Try this recipe.
½ cup urad dal 1 green chilli 1 tbsp tamarind chutney 1-inch ginger 1 tbsp green chutney Salt to taste 2 tbsp curd ½ tsp chaat masala ¼ tsp red chilli powder ½ tsp cumin seeds Oil for frying A pinch of hing
Wash and soak urad dal overnight and blend it with green chilli, ginger, hing, and cumin seeds.
Pour the blend into a deep vessel and stir it swiftly with your hands to incorporate air into it.
Drop a small amount of it in water to see if it floats. Now drop lemon-sized vadas in hot oil.
Instantly transfer deep-fried vadas into water. After an hour, squeeze the water and keep the vadas aside.
On a plate, add vadas and top them with chutney, red chilli powder, and curd.
You can serve it immediately or store vadas in the fridge and enjoy it for over a week.
