Cucumber tambuli is a cooling dish from Karnataka that is popularly made during hot summer days. Made with just cucumber, yoghurt, and mild spices, it can be whipped up in under 15 minutes.
1 cucumber 1 cup grated coconut 2-3 green chillies 1/2 cup yoghurt 1 tsp cumin seeds Salt to taste 1 tsp oil or ghee 1/2 tsp mustard seeds A few curry leaves
Chop the cucumber and cook it with a little water till soft. Set aside and let it cool.
Grind coconut, green chillies, and cumin seeds into a smooth paste.
Add the paste to the cooked cucumber. Mix in yoghurt and salt. Adjust the consistency with water.
For the tempering, splutter mustard seeds and curry leaves in oil and pour it over the tambuli.
Refrigerate for a while and serve with freshly prepared rice.
