Cucumber raita is a part of main-course meals, and it completes an Indian thali. Whether lunch or dinner, you can serve it as a hydrating and cooling element to complement the spicy, salty, and sweet notes of other dishes. Here is its recipe.
2 grated cucumber 2 cups curd 1 cup water 1.5 tsp olive oil ½ tsp cumin seeds 1 tbsp coriander leaves Salt to taste ½ tsp red chilli powder
In a bowl, whisk and curd and water to prepare a smooth blend.
Wash cucumbers thoroughly and grate them.
Mix cucumber and salt with curd.
Heat oil in a pan and let cumin seeds crackle in it.
Turn off the heat, add red chilli powder, and pour the tempering over the curd.
Garnish with coriander leaves and serve.
