Cucumber has a high water content, and when mixed with curd to make a bowl of raita, it just makes the perfect accompaniment for sunny days. Using minimal ingredients, here’s how to whip up kheera raita.
2 cucumbers 1 cup dahi 1 tablespoon lemon juice 2 tablespoons olive oil 1 tablespoon chopped mint Salt and pepper to taste
Rinse the cucumbers, peel the skin, and grate them.
Add some salt to the grated cucumber to eliminate the extra water content.
Whisk curd, olive oil, lemon juice, salt, and pepper.
Add the grated cucumber to the dahi and mix well.
Garnish with chopped mint leaves and refrigerate for about half an hour before serving.
