If you need a breakfast that feels like a reset for your system, these savory cucumber pancakes (inspired by the Maharashtrian Thalipeeth) are the answer. Cucumber is naturally hydrating and cooling, making it an excellent anti-bloat ingredient when paired with light rice flour. It’s a savory, no-fuss meal that provides the comfort of a pancake without the heavy, doughy aftermath.
2 medium cucumbers, grated (do not squeeze out the juice) 1 cup rice flour or besan (gram flour) 2 green chilies, minced A handful of fresh cilantro, chopped 1/2 tsp turmeric and a pinch of salt
In a bowl, mix the grated cucumber with the rice flour. The natural cucumber water should be enough to form a thick, pourable batter.
Fold in the chilies, cilantro, turmeric, and salt.
Heat a non-stick skillet with a light brush of oil.
Pour a ladle of batter and spread it gently into a circle.
Cover with a lid and cook on medium heat for 2 minutes; the steam helps keep the center moist while the bottom crisps up.
Flip and cook for another minute until golden spots appear. Serve hot with a side of plain Greek yogurt for a probiotic-rich start to your day.
