Fresh coconut is the perfect ingredient to amp up your batch of cookies. To give your baked treats a summer twist, add shredded coconut to the cookie dough. Bake to perfection and enjoy with tea or coffee.
1.25 cups maida ½ teaspoon baking soda ½ cup butter ½ cup brown sugar ½ cup granulated sugar 1 egg 1 teaspoon vanilla extract 1 cup unsweetened shredded coconut
Whisk maida and baking soda. Set aside.
In another bowl, mix butter and sugars. Beat in the egg and vanilla extract.
Gradually mix the dry ingredients till you get a smooth batter. Stir in shredded coconut.
Take small portions of the dough and arrange them in a baking tray. Bake for 10-15 minutes.
Let the cookies cool, and then serve with tea or coffee.
