The holy month of Shravan brings a specific set of dietary requirements for those observing fasts. Sabudana tikki remains a beloved staple during this period because it is both permissible and incredibly satisfying. These golden patties combine soaked tapioca pearls with binding mashed potatoes and a generous helping of crushed roasted peanuts for a dense texture. Seasoned simply with rock salt and green chillies, they provide a necessary energy boost during fasting days. Frying them until crisp yields a satisfying crunch that contrasts beautifully with the soft and chewy centre.
1 cup sabudana (sago), soaked overnight and drained well  2 medium potatoes, boiled and mashed  1/2 cup roasted peanuts, coarsely crushed  2 green chillies, finely chopped  1 tsp cumin seeds and rock salt (sendha namak) to taste  Ghee or neutral oil for shallow frying
Combine the soaked sabudana, mashed potatoes, crushed peanuts, green chillies, cumin seeds, and rock salt in a large mixing bowl.
Knead the mixture gently with your hands until it binds into a firm dough and pinch off small portions to flatten into neat round patties.
Heat a few tablespoons of ghee or neutral oil in a wide frying pan over a medium flame until it shimmers.
Shallow fry the assembled patties in batches until they develop a deep golden brown crust on both sides and serve hot with a fasting approved green chutney.
