Honey chilli potatoes are known for being a go-to snack or starter, and this version focuses on crisp texture and a quick toss in sauce so the potatoes stay crunchy. Frying once at the right temperature and coating lightly helps reduce oil absorption.
3 medium potatoes, cut into fingers 2½ tbsp cornflour Oil for shallow or deep frying 1 tbsp oil for sauce 1 tbsp finely chopped garlic 1 tbsp soy sauce 1½ tbsp honey 1 tbsp chilli sauce ½ tsp vinegar 1 tsp sesame seeds Spring onions, chopped
Toss potato fingers with cornflour and fry until crisp and golden.
Heat oil in a pan and sauté garlic briefly.
Add soy sauce, honey, chilli sauce, and vinegar, cook until glossy.
Add fried potatoes and toss quickly to coat evenly.
Garnish with sesame seeds and spring onions, serve immediately.
