To satiate your monsoon cravings for something crispy, here is a street-style recipe to make baingan ke pakore. Pakore are also the perfect way to add eggplants into your diet if you’re a picky eater.
2 eggplants 1 cup besan ½ teaspoon turmeric powder ½ teaspoon cumin powder ½ teaspoon coriander powder A pinch of hing 1 tablespoon curry leaves Salt to taste Oil for frying
Slice the eggplants into circular disks. Set aside.
Mix besan, curry leaves, haldi, cumin powder, coriander powder, hing, salt, and water.
Heat some oil. Coat the baingan slices in the besan batter.
Deep fry the slices till crispy and drain excess oil. Pair with chutney and serve hot.
