Chaulai ladoo, also known as amaranth ladoo, is a crunchy Indian sweet often prepared during the winter season. Loaded with iron, calcium, and fiber, these ladoos are both nourishing as well as tasty. Excellent as a guilt-free treat or an energy snack.
1 cup amaranth or chaulai) seeds ½ cup jaggery 1 tbsp ghee 1 tbsp chopped nuts (optional) 1 tsp cardamom powder
In a pan, dry roast 1 cup of amaranth seeds till they make a pop sound and turn crisp.
Empty the pan and in the same, heat ½ cup of jaggery with 1 tablespoon of water until it melts and gets a thick syrup-like consistency.
Add 1 tablespoon of ghee to get a glossy texture and rich taste.
Now mix popped chaulai, 1 tablespoon of cardamom powder, and some chopped nuts. Mix it quickly as the ingredients can begin to stick.
Grease your hands with some ghee and begin to make ladoos out of the mixture.
Before storing, let the ladoos cool down completely. Keep in an airtight box and it will stay fresh for 10-12 days.
