This creamy spinach corn sandwich is a quick and tasty snack made with a smooth filling of spinach, corn, and a light white sauce. It’s ideal for breakfast, tiffin, or a simple evening meal.
1 cup spinach (chopped) ½ cup boiled corn 1 tbsp butter 1 tbsp flour 1 cup milk Salt and pepper to taste 4 slices of bread
Heat butter in a pan, add flour, and cook for 1 minute before slowly whisking in milk to make a thick sauce.
Add spinach, corn, salt, and pepper, and cook until creamy.
Spread the mixture on one slice of bread and cover with another.
Toast or grill until golden brown and serve warm.
