Risotto is a rich, creamy Italian rice dish slow-cooked in broth until silky and velvety. Its starchy grains absorb flavour beautifully, making it a comforting meal. Add mushrooms, herbs or cheese to suit your taste.
1 cup Arborio rice 1 tbsp butter 1 tbsp olive oil ½ cup chopped onion 3 cloves garlic, minced ¼ cup white wine (optional) 3 cups warm vegetable/chicken broth ½ cup grated parmesan To taste salt & pepper
Heat butter and oil, then sauté onion and garlic until soft and fragrant.
Add the rice and toast the grains for a couple of minutes until slightly translucent.
Pour wine and stir to mix until it evaporates completely.
Add warm broth gradually, one ladle at a time, stirring continuously until the rice turns creamy while cooking simultaneously.
Turn off heat; mix in parmesan, adjust seasoning, rest for a minute and serve hot.
