Rasmalai is a dessert from the Bengal region. ‘Ras’ means juice or juicy, and ‘malai’ means cream, which refers to the clotted cream-filled thickened milk. Follow this recipe and savour the king of desserts!
1 litre of milk 1 piece of lemon ½ kg of sugar 2 tablespoons of condensed milk 1 teaspoon of cardamom powder ½ teaspoon of saffron strands 1 tablespoon of chopped almonds and pistachios
Boil the milk in a pan. Squeeze in the lemon juice and set it aside. Mix with a spoon until it curdles.
Drop in some ice cubes. Then, drain it through a muslin cloth. Hold it under running water.
For ½ hour, let the water drain from the cloth. Transfer it into the bowl afterwards.
Knead paneer into a dough. Roll into tiny balls. Drop the balls into the sugar-water that is boiling. Remove from the heat and let it cool.
In another pot, boil milk. Add sugar, condensed milk, and cardamom powder. Add the soaked saffron strands. Mix it gently.
In a serving bowl, place the fresh paneer balls soaked in sugar.
Pour the malai on top. Serve rasmalai to friends and family.
