Experience the creamy richness of the traditional rabdi kulfi, a royal Indian dessert that delivers the goodness of condensed milk, nuts, and saffron. Perfect for festivities or when you want something indulgent, this homemade kulfi will melt the heart in every bite with its dense, sweet, and nutty flavour.
1 litre of full-fat milk ½ cup condensed milk ¼ cup sugar ¼ tsp cardamom powder A few saffron strands soaked in warm milk 2 tbsp chopped pistachios and almonds
In a heavy-bottomed pan or vessel, pour 1 litre of full-fat milk and let it boil on a low flame till it reduces to half its quantity.
Add ½ cup condensed milk and ¼ cup sugar to the milk. Continue to cook it until the consistency turns thick and creamy.
Add some saffron milk and ¼ tsp cardamom powder and stir to get a rich aroma and golden shade.
Sprinkle about 2 tablespoons of chopped nuts to get some texture and traditional classic richness.
Let this mixture cool a bit, and pour it into kulfi moulds, and close them tightly.
Keep this for freezing for about 8-10 hours or overnight. Enjoy chilled, creamy Rabdi Kulfi after demoulding it.
