Creamy Pistachio Mousse Recipe To Serve At A New Year Dinner

Pistachio mousse works well for New Year dinners because it is rich yet light and can be prepared ahead. Using real pistachios instead of essence gives the dessert depth and a natural colour.

Ingredients

½ cup unsalted pistachios, soaked and peeled 200 ml fresh cream 2 tbsp icing sugar ½ tsp vanilla extract 1 tsp gelatin or agar-agar (optional, for a firmer set)

Step 1

Grind pistachios into a smooth paste using a little cream if needed.

Step 2

Whip the cream with icing sugar until soft peaks form.

Step 3

Fold the pistachio paste and vanilla gently into the whipped cream.

Step 4

Add dissolved gelatin or agar-agar if using and mix carefully.

Step 5

Chill for at least 2 hours before serving.
