A bowl of thick, creamy mushroom soup warms up a cold, winter December evening really well. It is made with the goodness of button mushrooms, milk, chicken stalk, wine, olive oil, minced herbs, and more. To taste the earth, savoury comfort, this winter soup is a must-try this Christmas. 4 cups of button mushrooms 4 tablespoons unsalted butter ½ teaspoon kosher salt ½ teaspoon freshly ground black pepper 1 medium chopped onion 4 medium cloves of garlic, minced 2 tablespoons flour 1 cup white wine 1 cup milk 5 cups chicken stock 2 bay leaves 2 sprigs fresh thyme 1 tablespoon lemon juice Minced herbs (parsley, thyme) 1 tablespoon olive oil
Melt butter over medium heat in a large saucepan. Add the button mushrooms, salt, and pepper, and cook well until the mushrooms turn brown.
Next, add the onion and garlic and cook until the aroma comes. Add flour to thicken and stir well to combine.
Add white wine and cook until reduced by about half. Now add chicken stock, bay leaves, milk, and thyme sprigs and stir to combine. Bring them to a simmer.
Blend the soup with a blender and season it to taste with more salt and pepper and a squeeze of lemon juice.
Garnish it with minced herbs and olive oil and serve immediately to warm up the winter evening.
