Mango Shrikhand, also known as Amrakhand, is a luscious, velvety dessert from Western India that combines hung curd (Greek-style yogurt) with fresh mango pulp. It is a brilliant way to enjoy the "King of Fruits" while getting a healthy dose of probiotics and protein. Flavored with saffron and cardamom, this no-cook treat is remarkably light yet satisfyingly rich.
2 cups hung curd (thick yogurt) 1 cup fresh mango pulp 1/2 cup powdered sugar 1/4 teaspoon cardamom powder A few saffron strands soaked in milk Slivered pistachios for garnish
Whisk the hung curd and powdered sugar in a large bowl until the mixture is completely smooth and creamy.
Fold in the fresh mango pulp, cardamom powder, and saffron milk until the color is vibrant and uniform.
Transfer the mixture into serving bowls and refrigerate for at least 2 hours to allow the flavors to meld.
Garnish with slivered pistachios and serve chilled.
