Mango Phirni is a luscious Indian dessert, a sort of creamy rice pudding, made with rice, milk, sugar and fresh mango pulp. It is perfect for summer; this chilled treat is easy to prepare and irresistibly delicious!
1/4 cup rice (soaked for 30 minutes) 4 cups full-cream milk 1/2 cup sugar (adjust to taste) 1/2 tsp cardamom powder 1 cup mango pulp 2 tbsp chopped pistachios
Soak and grind rice into a coarse paste.
Boil milk, add rice paste and cook until thickened, keep stirring to avoid lumps.
Add sugar, cardamom, saffron and let it cool completely.
Mix the mango pulp gently.
Pour the mango phirni into serving bowls, garnish with nuts and refrigerate.
