Rainy monsoon evenings call for comforting bowls of warm soup that do not require hours of standing over a hot stove. This rapid garlic mushroom soup leverages sliced button mushrooms, fragrant garlic, and fresh thyme sauteed in butter to extract deep, earthy flavours in under ten minutes. A splash of milk blended directly into the pan creates a velvety, luxurious texture without heavy cream, making it a soothing and light treat to sip while watching the rain.

Ingredients

250g button mushrooms, thinly sliced 1 tablespoon butter 3 cloves garlic, finely minced 1.5 cups vegetable stock 1/2 cup milk 1/2 teaspoon dried thyme Salt and freshly cracked black pepper to taste Fresh parsley for garnish

Step 1

Melt the butter in a saucepan over medium-high heat, then add the minced garlic and sliced mushrooms, sauteing for three minutes until the mushrooms brown and release their moisture.

Step 2

Stir in the dried thyme, salt, and black pepper, cooking for another minute until fragrant.

Step 3

Pour in the vegetable stock and milk, bring the liquid to a gentle boil, and simmer for three minutes.

Step 4

Blend half of the soup using an immersion blender for a creamy yet textured consistency, pour into bowls, and garnish with fresh parsley.
