This classic Christmas eggnog is creamy, silky and gently spiced, with a smooth warmth from rum. It can be served chilled or slightly warm, depending on how festive you want the evening to feel.
2 cups milk ½ cup cream 2 egg yolks 3 tbsp sugar ⅛ tsp nutmeg ⅛ tsp cinnamon ½ tsp vanilla extract 3–4 tbsp dark rum (adjust to taste)
Whisk the egg yolks and sugar together until pale and slightly thick.
Warm the milk and cream gently, then slowly pour it into the egg mixture while whisking continuously.
Return the mixture to low heat and cook until it thickens slightly, then remove from the hob and stir in vanilla, spices and rum.
Chill or serve warm, finishing with a light dusting of nutmeg.
