This comforting veg lasagne features layers of pasta, flavourful vegetables, tangy tomato sauce, and creamy white sauce. Baked until golden and cheesy, it’s a hearty, restaurant-style meal perfect for family dinners.
For Veg Sauce: 2 cups mixed vegetables (carrot, bell pepper, zucchini, onion) 1 cup tomato sauce 2 tbsp olive oil 1 tsp chopped garlic Salt & pepper to taste 1 tsp mixed herbs For White Sauce 2 tbsp butter 2 tbsp flour 2 cups milk Other 8-10 lasagne sheets 1 cup grated cheese (mozzarella & cheddar)
Heat olive oil, sauté garlic, add vegetables, and cook until soft.
Add tomato sauce, salt, pepper, and herbs; simmer until thick.
Prepare white sauce by melting butter, adding flour, and whisking in milk till creamy.
Layer veggie sauce, lasagne sheets, white sauce, and cheese in a baking dish.
Repeat layers, finish with cheese, and bake at 180°C for 30-35 minutes until golden.
