Bubbling cheese melts into every crevice of the cauliflower, creating a thick, velvety layer that stretches with each scoop while the top forms a golden crust that adds just the right contrast.
1 medium cauliflower, cut into florets 2 tbsp butter 2 tbsp flour 2 cups milk 1½ cups grated cheddar cheese ½ tsp salt ½ tsp black pepper
Boil cauliflower florets for 5 minutes until just tender, then drain and set aside.
Melt butter in a pan, stir in flour, and cook briefly before slowly adding milk to form a smooth sauce.
Add cheese, salt, and pepper, stirring until melted and thick.
Mix cauliflower into the sauce and transfer to a baking dish.
Bake at 180°C for 20 minutes, until bubbling and lightly golden on top.
