This broccoli soup has a smooth, velvety texture that feels comforting without being heavy. The broccoli cooks gently with onions and blends into a warm, nourishing bowl that works well for winter meals. A little milk or stock helps build body while keeping the flavour fresh and mild. Serve it hot with bread or a simple salad.
2 cups broccoli florets 1 small onion (chopped) 1 cup milk or vegetable stock 1 tbsp butter Salt and pepper
Sauté onions in butter until soft, then add broccoli and cook briefly.
Pour in milk or stock and simmer until the broccoli becomes tender.
Blend the mixture until smooth and return it to the pan.
Season with salt and pepper and heat gently before serving.
