What’s better than cheddar cheese? Well, it’s clearly this super-easy recipe for broccoli and cheddar soup, which is loaded with vitamins and minerals. Try this scrumptious recipe at home when your body is craving a warm bowl of comfort!
2 cups of chopped broccoli 8 tablespoons of butter 1 yellow onion, diced 1 large carrot, diced 2 stalks of celery, diced 4 cloves of garlic, minced ¼ teaspoon of black pepper powder 2 cups of vegetable broth 1 block of cheddar cheese, shredded Salt to taste
Melt the butter in a heavy-bottomed pot over medium heat. Add celery, onion, and carrots.
Let it simmer for 6 to 8 minutes, until tender and sweet.
Add salt, black pepper, and minced garlic and stir. Cook until aromatic, about 30 to 40 seconds.
Add veggie broth and chopped broccoli. Bring to a gentle boil.
Lower the heat and simmer until the broccoli is soft. Blend with a hand blender until nearly smooth.
Keep the heat low. Gradually add the shredded cheddar, stirring constantly until it melts.
Add salt and pepper to taste. Serve with sourdough, garlic toast, or crusty bread. You also add a knob of butter or more cheddar on top.
