Charring the corn slightly in a hot skillet builds an authentic campfire depth that cuts through the rich, creamy blend of cream cheese and mayonnaise. 

Ingredients

2 cups sweet corn kernels (fresh or thawed)  150g cream cheese, softened  100g shredded cheddar or mozzarella cheese  3 tablespoons barbecue sauce  2 tablespoons mayonnaise  1 small onion, finely diced  1 teaspoon garlic powder  Salt and black pepper to taste

Step 1

Sauté the sweet corn kernels and diced onion in a hot skillet with a touch of oil until the corn develops light charred spots for a smoky flavour.

Step 2

Whisk the softened cream cheese, mayonnaise, and barbecue sauce together in a bowl until smooth, then stir in half of the shredded cheese and the garlic powder.

Step 3

Fold the charred corn mixture directly into the creamy base, season with salt and pepper, and transfer everything into a baking-safe dish.

Step 4

Top the dip with the remaining shredded cheese and bake at 200 degrees Celsius for 15 minutes until bubbly, golden, and melted.
