Lemon curd is a thick spread made from fresh lemons and is one of the easiest things to make. It has a smooth and creamy texture with a zingy and sweet flavour, which you won’t be able to resist.
3 large eggs 2-3 lemons’ fresh lemon juice Zest of 2 lemons 3/4 cup granulated sugar 1/4 cup unsalted butter
Whisk eggs, sugar, lemon juice, and lemon zest until smooth.
Place a bowl over a simmering pot of water, stir continuously to prevent curdling, and cook until the mixture thickens.
Remove from heat and stir in the butter, some pieces at a time, until the texture gets smooth and glossy.
Strain the curd through a fine mesh to remove the zest and let it cool.
Transfer to a jar and store in a refrigerator for up to 2 weeks.
