This vrat makhana barfi offers a rich, delicate, and wholesome sweet treat made specially for fasting days. Roasted fox nuts (makhana) and cashews are ground into a fine powder and slow-cooked in pure ghee with milk and cardamom. Set into soft fudge squares and garnished with slivered pistachios, this nutrient-dense farali barfi provides a clean energy boost during upvas.
2 cups makhana (fox nuts) 1/2 cup cashews 2 cups full-fat milk 1/2 cup sugar or organic jaggery powder 2 tablespoons pure ghee 1/2 teaspoon cardamom powder 1 tablespoon slivered pistachios and almonds for garnish
Dry roast the makhana and cashews in a pan over low heat for six to eight minutes until crisp, then cool completely and grind into a fine powder.
Heat pure ghee in a heavy pan, add the ground makhana-cashew powder, and sauté on low heat for three to four minutes until aromatic.
Pour in the milk and sugar, stirring continuously over medium heat until the mixture thickens and begins to leave the sides of the pan.
Stir in the cardamom powder, transfer the mixture into a greased tray, flatten evenly, top with slivered pistachios, and let it set before cutting into squares.
