Misal pav is one of Maharashtra’s most loved street foods, especially famous in Pune and Kolhapur. The dish consists of a spicy sprouted lentil curry topped with crunchy farsan, onions and fresh coriander. A layer of spicy oil called tarri adds heat and depth to the dish. It is traditionally served with soft pav bread and eaten as a hearty breakfast or lunch.
For the curry 1 cup sprouted moth beans (matki) 1 onion finely chopped 1 tomato chopped 2 tbsp oil 1 tsp mustard seeds 1 tbsp ginger garlic paste 1 tsp red chilli powder 1 tsp goda masala ½ tsp turmeric Salt to taste For serving Farsan mixture Chopped onion Fresh coriander Lemon wedges Pav bread
Heat oil in a pan and add mustard seeds followed by chopped onions and cook until lightly golden.
Add ginger garlic paste, tomato and spices and cook until the mixture becomes aromatic.
Add sprouted moth beans with water and simmer until the curry thickens and the beans soften.
Pour the curry into bowls and top generously with farsan, onions and coriander.
Serve hot with pav bread and lemon wedges.
