Honey chilli potato is a popular Indo-Chinese dish found in Indian restaurants. It combines crispy fried potatoes with a sticky sweet-spicy sauce. The contrast between crunch and glaze defines the dish. It is usually served as a starter or appetiser. The sauce should coat the potatoes lightly rather than drown them.
3 medium potatoes, cut into thin strips 2 tbsp cornflour Oil for frying 1 tbsp garlic, minced 1 tbsp soy sauce 1 tbsp tomato ketchup 1 tbsp honey ½ tsp red chilli flakes 1 tsp vinegar 2 tbsp spring onions, chopped
Toss potato strips in cornflour and fry until golden and crisp.
In a pan, sauté garlic briefly.
Add soy sauce, ketchup, honey, chilli flakes and vinegar.
Toss fried potatoes in the sauce until evenly coated.
Garnish with spring onions and serve immediately.
