When life gets chaotic, this 3-ingredient butter pasta is the culinary equivalent of a soft blanket. By using the emulsification technique, mixing starchy pasta water with high-quality butter and cheese, you create a glossy, restaurant-grade sauce without any heavy cream. It’s minimalist cooking at its most decadent and takes less than 15 minutes.
250g pasta (any shape) 4 tbsp unsalted butter, cubed 1/2 cup grated Parmesan cheese Reserved pasta water Black pepper to taste
Boil your pasta in salted water until al dente, making sure to reserve at least 1 cup of the starchy water before draining.
Return the hot pasta to the pan over low heat and add the butter cubes along with a splash of the reserved water.
Stir vigorously as the butter melts to create a creamy, glossy emulsion that coats every strand.
Remove from heat, toss in the Parmesan and plenty of cracked black pepper, adding more water if needed to reach peak silkiness.
