Soft paneer and sweet peas cook slowly in a rich, spiced gravy, filling the kitchen with heartwarming aromas. Every bite feels like a cosy winter hug, comforting the soul and warming the chilly day.
200 g cubed paneer 1 cup green peas (fresh or frozen) 2 pureed onions 2 pureed tomatoes 2 tbsp soaked and ground cashews 1 tbsp ginger-garlic paste 1 tsp red chilli powder 1 tsp coriander powder ½ tsp garam masala 2 tbsp butter 1 tbsp oil Salt to taste 1 cup water
Heat butter and oil together in a pan, add the onion puree, and cook on medium heat until it turns light golden and aromatic.
Add the ginger-garlic paste and cook for a minute, then stir in the tomato and cashew puree and cook until the oil begins to separate.
Add chilli powder, coriander powder, and salt, stir well, and let the masala cook slowly to develop the depth of flavour.
Add the peas and water, cover, and simmer until the peas are tender and the gravy thickens slightly.
Add the paneer cubes and garam masala, simmer for 3-4 minutes, and serve hot with roti or rice.
