Fresh coriander, pepper, garlic, and lemon come together beautifully in this Lemon Coriander Soup recipe that feels light yet flavourful. The warm, citrusy broth works perfectly for rainy evenings, quick dinners, or soothing low-effort meals at home.
1 tablespoon oil 1 tablespoon chopped garlic 1 tablespoon chopped ginger 2 tablespoons chopped coriander stems 3 cups vegetable stock 1 tablespoon soy sauce 1 teaspoon black pepper powder 1 tablespoon lemon juice 2 tablespoons chopped coriander leaves Salt as required
Heat oil in a pan and sauté garlic, ginger, and coriander stems for a minute.
Pour vegetable stock into the pan and bring the mixture to a gentle boil.
Add soy sauce, black pepper powder, and salt, then simmer for 5 minutes.
Stir in lemon juice and chopped coriander leaves at the end.
Serve the soup hot with extra coriander and crushed pepper on top.
