This corn salad is light, nutritious, and can be put together in just a few minutes. It’s ideal as a side dish for lunch, a quick snack on a hot day, or even as part of your dinner spread. The mix of sweet corn, crunchy vegetables, and tangy seasoning makes it very satisfying.
1 cup boiled sweet corn (fresh or frozen) ½ cucumber (finely chopped) 1 small tomato (deseeded and chopped) ¼ red onion (finely chopped) 1 green chilli (finely chopped, optional) A few coriander leaves (chopped) ½ tsp chaat masala Juice of ½ lemon Salt to taste Black pepper to taste
Boil the sweet corn if using fresh or frozen. Let it cool completely before adding it to the bowl.
Add the chopped cucumber, tomato, onion, green chilli, and coriander leaves to the corn.
Sprinkle salt, black pepper, and chaat masala over the mixture. Squeeze the lemon juice on top and mix everything gently.
Let the salad sit for a few minutes so the flavours come together, or chill it briefly before serving if you prefer it cold.
