Corn pulao is a simple rice dish cooked with sweet corn, basmati rice, and mild spices. It is light on the stomach, easy to prepare, and works well as a quick lunch or dinner.
1 cup basmati rice (washed and soaked for 20 minutes) 1 cup sweet corn kernels (fresh or frozen) 1 medium onion (sliced) 1 green chilli (slit) 1 tsp ginger-garlic paste 2 tbsp oil or ghee 1 bay leaf 1 tsp cumin seeds 2 green cardamoms 1-inch cinnamon stick 2 cups water Salt to taste Fresh coriander leaves for garnish
Heat oil or ghee in a pan. Add cumin, bay leaf, cardamom, and cinnamon.
Add sliced onions and sauté until golden. Stir in ginger-garlic paste and green chilli. Add corn kernels and sauté for a few minutes.
Drain soaked rice and add to the pan. Mix gently with spices and corn. Pour water, add salt, cover, and cook on low flame until rice is done.
Garnish with fresh coriander leaves and serve hot.
