Corn pakoda or bhajiya is a rainy-day staple. With the downpour, the urge to indulge something crunchy paired with a hot cup of chai is real. To make the famous street food at home, here’s a quick recipe.
1 cup sweet corn kernels 1/2 cup besan 2 tbsp rice flour 1/4 cup chopped onion 1-2 green chillies 1/2 tsp ginger-garlic paste 1/2 tsp cumin powder 1/4 tsp turmeric powder A pinch of hing 1/4 cup coriander leaves Salt to taste Water as needed Oil for deep-frying
Mix besan, rice flour, cumin powder, turmeric powder, hing, and salt.
Add corn kernels, chopped onion, green chillies, ginger-garlic paste, and coriander leaves.
Gradually add water to make a batter, and make sure the corn kernels are well-coated.
Heat some oil and deep-fry the corn pakodas in batches till crispy.
Drain the extra oil and serve with a chutney and a cup of chai.
