Crispy from the outside, soft and cheesy from inside, corn cheese tikki is a snack that is indulgent and familiar. It is perfect to pair with evening chai and can be prepared using simple pantry ingredients.
1 cup boiled sweet corn (lightly crushed) ½ cup grated processed cheese or mozzarella 2 tbsp boiled potato (mashed) 2 tbsp bread crumbs (plus extra for coating) 1 tsp cornflour 1 tsp green chilli (finely chopped) 1 tsp ginger (grated) ½ tsp black pepper powder ½ tsp red chilli flakes Salt to taste Oil for shallow frying
Lightly crush the boiled sweet corn while keeping some texture. Transfer it to a bowl so the tikkis remain chunky, not pasty.
To this, add grated cheese, mashed potato, bread crumbs, cornflour, green chilli, ginger, salt, pepper and chilli flakes. Mix gently so that everything is bound well.
Divide the mixture into equal portions and shape them into flat tikkis. If it feels sticky, lightly grease your palms for shaping smoothly.
Roll each tikki lightly in bread crumbs for extra crispiness. This outer coating will help the tikkis hold their shape while frying.
In a pan, heat oil on a medium flame. Shallow-fry the tikkis, flipping gently, until both sides turn golden and crisp.
Keep it on a tissue paper and serve hot with mint chutney or ketchup.
