When you are not in the mood to cook a meal but still need to satisfy your hunger, opt for a stuffed paratha and coriander-tomato chutney to go with it. It will take you less than 30 minutes to create a plate that screams comfort food.
2 tomatoes 20 grams coriander 2 green chillies ½ tsp salt ½ tsp sugar ½ tsp rock salt 2-3 garlic cloves 1-inch ginger
Wash and keep the dhaniya aside. Meanwhile, chop tomatoes.
Peel the skin of garlic cloves and add them to the grinder. You can skip garlic if you don’t like it.
Add all the ingredients to the processor. You can also use mortar and pestle.
Grind the ingredients into a coarse paste.
Taste and adjust saltiness and sourness. You can add some lemon juice too.
Enjoy dhaniya-tamatar chutney with palak, bathua, beetroot, and other stuffed parathas.
